Soy Beans from Waipara North Canterbury, Rice from Australia, Salt from Blenheim, Koji Culture from Kyoto Japan.
We are trying to use local ingredients as much as possible. But no one grows rice in New Zealand and Koji Culture is so special that I can not get it any where in the world except Japan.
To be safe, I would say that it will last more than three months, if stored in the fridge after opening.
Actually, it tastes better and better over time.
All our products are unpasteurized, so contain beneficial organisms.
